Roasted Pepper and Passionfruit Kebabs

For the Kebabs

  • Peppers, Aubergine and Courgette Cut into bitesized pieces.
  • Starfruit (Optional) Cut into slices approximately 1cm thick.

For the Passionfruit Glaze

  • Pulp of 2 Passionfruit
  • 2 Tbsp Garlic Puree
  • 2 Tbsp Tomato Puree
  • 2 Tbsp Soy Sauce
  • 2 Tbsp Water
  • 1 Tbsp Ginger Puree
  • 1 Tbsp Maple Syrup


  • Preheat the oven to 200℃ (392℉)
  • Cut the veggies into bitesize pieces and slice the starfruit. Slide the pieces onto kebab sticks.
  • In a bowl, add all the ingredients for the passionfruit glaze and mix well.
  • Baste both sides of your kebabs with the glaze, then place them onto a lined baking tray.
  • Roast your kebabs in the centre of the oven for around 30 minutes, until the glaze begins to caramalise.
  • Serve and enjoy!
